Spicy Cauliflower soup




Spicy Cauliflower soup


You'll need: 

Cauliflower - 300gr
Potato - 300 gr
Carrot - 200 gr
Olive oil - 2tbsp
Onion - 1
Pilled carlic cloves - 2
Green chilli - 1
Ginger - 1tsp
Coriander - 1 bunch
Coconut (or regular) milk - 4dl
Chicken broth - 8dl or veggie knorr - 3-4 (in this case you add 8dl of water to the soup)
Salt and various kind of peppers on your taste.

Let's get the party started!

1. Pill and chop onion, garlic. For chopping the chilli, WEAR the rubber gloves! Believe it, you'll thank me for that :D Wash chilli and remove the seeds out and chop it small. Chilli is really hot, thus add as much as you think is good for your health. 

Fry all of them in the pan with the olive oil on the medium heat, until they get a bit brownish.


2. Pill, wash and chop carrots and potatoes. Wash, and separate cauliflower's little "flowers" from each other with hand. Add all of the veggies, with the spices to the pan. Add chicken broth (8dl), or 3-4 Knorr cubes and 8dl of boiled water. Let it gently boil on the medium heat for 10-15 minutes. When veggies are ready, add milk to the soup and let it gently boil for 5 more minutes. Then take the pan from the hot spot of the stove, and decorate it with chopped coriander. Adding squeezed lemon juice adds extra nice taste to the soup :)
