Rahkapullat - Curd buns



Rahkapullat - Curd buns



You'll need:

For the dough:

Milk - 5dl
Fresh yeast - 25 gr (2 small bags if the yeast is dry)
Salt - 1tsp
Sugar - 1,5 dl
Eggs - 2
Flour - 7-8 dl
Margarin - 100 gr

For the filling:

Non-fat Rahka (curd) (i used vanilla curd) - 300 gr
Sugar -  0.5 dl
Fistful amount of raisins
1 lemon's zest 
Fresh lemon juice - 1tsp
Egg - 2 (one for the filling, another to cover the buns with)
Vanilla sugar - 1tbsp


Let's get the party started! ;)

1. Warm up the milk, and melt the margarine to the room temperature and mix them with sugar, eggs, salt, yeast. Gradually start adding the flour and knead it until it becomes into a nice ball shape. Place the dough into the bowl and cover it with clean towel and some warm blanket. Let it rest for 1 hour (approximate time until it rises to the double size).


2. After dough raises twice its original size, punch it slightly to get the air out and form small balls. Place the balls into the baking paper on the baking tray and cover it clean towel and let it raise for another 30 minutes.


3. While dough balls rest, prepare the filling :) Place raisins into the bowl and add boiled water to it, so they get soft. Let them remain in the water for 15-20 minutes.

Afterwards, dump the water where raisins are, and mix sugar (haha i forgot to add the sugar when taking the photo :D ), lemon zest, squeezed lemon juice, rahka(curd), egg, vanilla sugar, altogether.


4. Once you mix them all, end result should look similar to the photo below :)


5.After 30 minutes, start making "a pit" in the dough balls. Rub a little bit of oil on the bottom of the drinking glass (so glass won't stick to dough), place it on tom of the ball and press it. Press it hard enough that it forms a "pit", yet it doesn't make the whole in it. 


6. When "pits" are done, whisk the egg in the bowl and cover buns with it before you add filling. Add 1-2 tablespoons of the filling into the pits, depending on how deep and wide the pits are. Filling should not spill out out of the buns, otherwise it will cause a mess.


7. When all of the buns are filled with the filling, place the tray into the pre-heated oven to 200C (392F) , into the middle section and let it get baked for 10-15 minutes, or until the dough becomes light brown.
