My first try of french "La brioche" bread

                                         

"Brioche" is a highly enriched French bread, whose high egg and butter content give it a rich and tender crumb. It has a dark, golden, and flaky crust from an egg wash applied after proofing. Since i prefer food to be light and not too heavy and fat, i add oil instead of butter.




The ingredients:

*1/4 cup warm milk
*yeast
*2 teaspoon sugar
*1 pinch of saffron
*1/2 warm water
*2 eggs
*3 tablespoon of butter
*1 teaspoon of salt
*3 cups (340 gram) of flour
*1 egg white
*1 teablespoon cold water
*2 teaspoon of sesame seeds

1. In a small bowl, pour the milk, stir in the yeast & sugar, let stand 10 mins.

2. In a large bowl beat the eggs and mix them. Add saffron water, butter, salt and beat a minute longer. Stir with the milk mixture. Mix little by little with flour until a soft dough forms






3. Knead until smooth and elastic.



4. Transfer the dough on a butter sheet turning to coat with the butter. Cover and let rise in a warm place for 2 hours


5. Divide into 3 equal pieces. On a floured surface roll out each piece. Place the 3 ropes side-by-side on the baking sheet. Pinch the top ends together. Braid. Then tuck the ends.



6. Whisk the edd white with the cold water. Brush over the braid. Sprinlke over with sesame seeds. Cover and let rise one more hour.


7. Bake for 30 min on a preheated oven (190 C)




Optional: 1. If you like, you can dissolve the saffron in the water and add to dough.
               2. You also can add raisins to the dough as well. I am not sure if in original briouche they do add
                    it, but tastes good :)
